Day 94 - "Lake"

Today before we left the moms decided to take a ride on the 4-wheelers without the children.  We set off to find this lake.  Our first turn was the wrong one and we ended up herding cows for awhile.  :P  Our second turn was the right choice though.  I can't really say it was a "lake", although that's what the sign said.  Was more like a pond.  Loved the water lilies.  I only had my wide angle with me otherwise I would have gotten some macros of them.

Day 74 - Caramelized Apple Tart with Cinnamon Custard

this is for Tara...  come over and eat anytime.

The Apples
3 apples
2 tablespoons unsalted butter
2 tablespoons sugar

1.  Preheat oven to 375 F.  Butter a 9-inch tart pan.  Peel and core the apples, then slice them into a 1/2 inch wedges.  Melt the butter in a wide nonstick skillet, add the apples, and sprinkle them with the sugar.  Cook over high heat, occasionally flipping the apples, until they start to caramelize, then reduce the heat to medium.  This should take about 15 mnutes in all.  Turn off heat.

The Batter
1/2 cup (1 stick) unsalted butter at room temperature
1/2 cup sugar
3 medium eggs at room temperature
1 teaspoon vanilla extract (I substitued Almond extract)
pinch salt
1 cup all-purpose flour

2.  To make the batter, cream the butter and sugar in a mixer with the paddle attachment until light and fluffy.  Add the eggs one at a time, beating until each is incorporated before adding the next.  Add the vanilla and salt, then stir in the flour.  Smooth the batter into the tart pan with an offset spatula, pushing it up the sides to make a rim.  Lay the apples over the batter.

The Cream
1/2 cup heavy cream
1 teaspoon ground cinnamon
1 egg yolk

confectioners sugar

3.  Mix the ingredients for the cream together, then pour it over the apples.  Set the tart on a sheet pan and bake until the crust is golden and starting to pull away from the sides, about 35 minutes.  Let cool for at least 20 minutes before serving.

Day 9 - Listen To The Light

The light was speaking to me this afternoon as it made the kitchen glow.  Most of the day was cloudy until this very moment.  All of a sudden I felt alive again.  I think this pig might have felt the same way as he basked in it's glory.

Day 136 - dog sitter

we are watching my sisters dog for the weekend.  you have all seen him before.  I love this guy.  he is the most laid back dog you will ever meet.  it's been fun watching him and a good excercise to see if we are ready to have one of our own someday.  I can say as of right now O is NOT ready.  she bugged him so much that he growled at her and that is a hard thing to accomplish with this dog.  he is seriously mr. mellow and lets her do a lot before he gives her a warning growl.

Day 6 - Ticket To Ride

A ticket to the past...

I spent such an amazing day with my mom.  We looked through her old records and reminisced, played a few tunes, danced, sang, laughed...  it was wonderful.  All of the music brought back so many memories, not all good either, but good to remember even if they hurt. 

For those that know the story about my mom, she is doing so well.  I'm so proud of her and glad to have her "back" with us.  I hope she never "gets lost" again.

Day 41 - Finally Spring

It's finally starting to feel a little more like spring!  We were outside in t-shirts and bare feet.  Funny how it was only about 55 degrees, but it felt like 80!  In LA I would still be wearing my heavy winter coat at that temp.  It's strange to me how it always feels so much warmer here.  Maybe it has something to do with the really long winter we just had.  I'm knocking on wood when I say the snow seems like it's finally over.

We met our neighbors today who seems very nice.  They have three kids, one of them is O's age.  They might even be in the same class next year.  Their mom sat and talked with me and my sister for a few hours.  She wants her kids to learn better English and thought it would be good to have them play with Olivia.  I'm excited!
